When to make it

Bake up to 2 days ahead and keep wrapped at room temperature, or freeze for a month. Warm, wrapped in foil, for 8 minutes.

Add it to your plan and Chef puts these on the right days, and fits it into your oven on Thursday.

For 8

  • ¾ cupwhole milk warm, about 105°F
  • 1½ tspinstant yeast one packet
  • 2 tbspsugar
  • ⅔eggs
  • ½ stick (4 tbsp)unsalted butter melted, plus more for brushing
  • 2¼ cupsall-purpose flour
  • 1 tspkosher salt
  • ¾ tspflaky sea salt to finish

How to make it

  1. Make the dough

Whisk the milk, yeast, sugar, egg and melted butter. Add the flour and salt and knead 8 to 10 minutes by hand (6 in a mixer with the dough hook) until smooth and springy. Cover and let rise in a warm spot until doubled, about 1 hour.

  2. Shape

Roll the dough to a 1/2-inch-thick rectangle. Cut 12 rounds or rectangles, brush each with butter and fold in half so the top overhangs a little. Set them snugly in a buttered 9 by 13-inch pan. Cover and rise 45 minutes, until puffy.

  3. Bake

Bake at 375°F for 18 to 20 minutes, until deep golden. Brush with butter and sprinkle with flaky salt while hot.

  4. Thursday

Wrap the pan in foil and warm at 375°F for 8 minutes, just before dinner.

Chef's notes

  • Plan on two rolls per person: they disappear.
