Olives, omakase, and a list from Lima

New cookbooks landing this week, restaurants opening from Marylebone to Azabudai Hills, and the yogurt dessert everyone's suddenly making.

It is the kind of week where the cookbook shelves and the opening calendars are both stuffed, and somehow a two-ingredient Japanese cheesecake is the thing holding the internet's attention. The 50 Best Restaurants people dropped half their list before Lima even opens its doors. Here is what is actually worth your time.

Around the world

On the shelf

Essentially Basque: Bringing Spanish Cooking Home
by Ryan Bartlow and Laurie Woolever · New cookbook

A home-kitchen guide to Basque-Spanish cooking, with plating tips, cocktails and menus built around pintxos, stews, fish and the drinking culture that goes with it all. Out October 13, right as Basque Country keeps turning up on best-restaurant lists, this is the book that explains why everyone keeps going on about it.

The Little Book of Olives
by Anna Hezel · New cookbook

A small book of 25 olive recipes plus olive history, trivia, and a buying and storing guide, including cocktails that use olives. It published October 13 and it is the rare cookbook with a single, stubborn idea: one ingredient, done thoroughly.

Ottolenghi Simple Too
by Yotam Ottolenghi · New cookbook

A follow-up to Simple, aimed at the same weeknight, minimal-ingredient cooking but with a new set of recipes. It is out October 6 and belongs to the fall's run of big-name releases, alongside Ina Garten's Simply Ina and Marcus Samuelsson's Back to Green, both landing October 20.

Around the world

Chez Calvert
modern European, Japanese-sourced · Tokyo

British chef Daniel Calvert's first solo restaurant, in Azabudai Hills, with interiors designed by architect John Pawson. It opened October 1 and is already being talked about for the pairing of Calvert's cooking with Pawson's famously minimalist rooms.

Soraya
Persian · London

A Persian restaurant in Marylebone from the team behind Lagana, Bottarga, Nina and Zephyr, built around flame-cooked grills and slow-cooked khoresh. It had a soft run before its official October 15 launch and is already called the group's biggest opening to date.

The 50 Best Restaurants 2026, No. 51 to 100
Lima

The extended list dropped October 21 ahead of the full top 50 reveal in Lima on November 4, with Uliassi in Senigallia topping the extended group and Shanghai's Ling Long as the highest new entry. Mexico landed five places and SingleThread is the only U.S. restaurant to make the extended cut, which is the kind of thing that gets argued about at dinner for weeks.

The thing everyone's making

Two-ingredient Japanese cheesecake

A cheesecake made from just yogurt and cookies, no baking required, that creators keep remixing into things like yogurt tiramisu with espresso-soaked Lotus biscuits. It is the trend of the moment on food TikTok right now, part of a bigger wave of yogurt-based, high-protein desserts that also includes frozen fruit clusters.

In New York

New this week

Straker's
British, wood-fired · SoHo · New York

London chef Thomas Straker's first US restaurant, in the old Lucky Strike space on Grand Street. It opened October 10 and is the week's biggest import, a four-year-old London concept finally crossing over.

Book ahead, the former Lucky Strike room will draw crowds on name alone

HUMM
New American, wood-fired · West Village · New York

Daniel Humm's first restaurant under his own name, in the old En Japanese Brasserie space, a looser a la carte sibling to Eleven Madison Park. It opened October 10 with a ceiling hand-painted by Francesco Clemente and a 1,500-bottle wine list, and it is the most written-about opening of the fall.

bakery, all-day · Washington Heights · New York

An all-day bakery and bistro from Delmonico's Hospitality Group, with an open kitchen so you can watch the sourdough get shaped and baked. It opened last week and is the first stop in a planned multi-state expansion for the historic steakhouse's parent company.

Everyone's talking about

RYE
bakery · SoHo · New York

A new bakery selling a single naturally-leavened sourdough rye loaf for sixty dollars, which has pulled lines and a wave of sticker-shock coverage. The piece questioning whether the novelty survives the backlash just ran this week, making it the loaf everyone has an opinion on.

Go early if you want to see the line, later if you just want the take

Worth trying

crispy feta with sesame and shallot agrodolce
at HUMM · New York

One of the opening dishes on Daniel Humm's new a la carte menu, alongside tuna crudo and a chicory and tangerine salad. The restaurant just opened and this is the kind of looser, shareable plate Humm has said he wants people to come back for often.

Order it at the bar if you cannot get a dining room table

cardamom bun
at La Cabra · New York

The Danish import's signature bun, now baked fresh at its new Lantern House cafe. The cafe only opened last weekend, so the buns are as fresh to New York as they get.
