Allesso di scottona: braised beef brisket in its broth, with chicory, on a roll
Sergio Esposito made this market stall famous; since his death his son keeps making Rome's old offal and boiled-beef sandwiches.
3 hr (20 min hands-on) · 6 panini. Florence's street sandwich: tripe (lampredotto) or beef simmered for hours in a vegetable broth, chopped onto a crusty roll whose top is dipped in the broth, with green sauce and chili oil. At home, beef brisket gives you Rome's allesso the same way.
