Does the cottage cheese flatbread work?
Works, with a fixPhoto: KaleJunkie
Works, as a wrap. It tears and sticks if you pull it too soon, and it won't taste like bread.
The recipe: Nicole Keshishian Modic · @kalejunkie on Instagram
In the summer of 2024 the baked cottage cheese wrap was everywhere: blend cottage cheese and eggs, bake it in a sheet, roll it like a tortilla. Good Morning America counted tens of millions of posts. Nicole Keshishian Modic of KaleJunkie published the tested version most people cook from, with Parmesan and garlic.

What goes wrong, and the fix
Cottage cheese, eggs, Parmesan and garlic, blended smooth and baked thin on a sheet pan into a soft, bendy high-protein wrap.
- It sticks to the pan and rips when you lift it.Bake on parchment, not foil or a greased pan, and let it cool 10 minutes before you peel it off.
- The middle is soggy and eggy.Spread it thin, about 1/4 inch, and bake until the top looks dry and the edges are deep golden. Most failures come out 10 minutes early.
- Lumps of curd make holes and a rubbery texture.Use full-fat cottage cheese and blend it for a full minute, until it's completely smooth, before you add the eggs.
- It falls apart around a wet filling.Fill it with things that are dry or drained, and roll it up just before you eat.
Chef's version
45 min · serves 2 · after Nicole Keshishian Modic's recipe, with the fixes in
You need
- 8 oz (225 g) full-fat cottage cheese
- 2 large eggs
- 3 tbsp finely grated Parmesan
- 1 garlic clove
- 1 tsp Italian seasoning
- A pinch of salt and black pepper
How to make it
- Heat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
- Blend the cottage cheese and garlic in a blender or food processor for a full minute, until completely smooth. Add the eggs, Parmesan, seasoning, salt and pepper and blend 10 seconds more.
- Pour it onto the parchment and spread it into a thin, even rectangle about 1/4 inch thick (roughly 10x13 inches).
- Bake 35 to 40 minutes, until the top looks dry all over and the edges are deep golden brown.
- Let it cool on the pan for 10 minutes, then peel the parchment away from the back. Cut it in half for two wraps.
- Fill with something not too wet (turkey, greens and mustard; or egg, avocado and chili crisp) and roll it up tight.
Good to know
- It keeps 3 days in the fridge between sheets of parchment; warm it in a dry pan for 30 seconds to make it bendy again.
- For a spinach version, blend in a big handful of baby spinach with the cottage cheese.
