Does the dense bean salad work?
Works, with a fixA photo like it · Wikimedia Commons
Works, and it's a great lunch. But day three is a soggy jar unless you change the order you build it.

Violet Witchel, a CIA-trained cook with a couple of million followers, started posting "dense bean salads" in late 2023: beans and chopped vegetables, no lettuce, a sharp dressing, made to last the week. Her Mediterranean one passed 12 million views on TikTok in 2024, and two years later people are still posting their own every week.

What goes wrong, and the fix
Two cans of beans, a lot of chopped crunchy vegetables, olives, feta, herbs and a punchy vinaigrette, all in one container. Lunch for four days.
- By day two there's a puddle in the bottom and everything tastes watery.Salt the cucumber for 10 minutes and drain it, and dry the rinsed beans on a towel. The water was coming from them, not the dressing.
- The beans taste like the can, even though the dressing is good.Toss the beans alone in the dressing first and let them sit 20 minutes. Beans soak up flavor; cucumbers don't.
- Raw red onion takes over the whole jar by day two.Chop it fine and let it sit in the vinegar while you prep. Five minutes takes the bite out.
- The herbs go black and the feta turns to paste.Keep the herbs and feta in a separate small container and add them to the day's portion.
Chef's version

You need
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) cannellini or butter beans, drained and rinsed
- 1 English cucumber, cut in 1/2-inch dice
- 1 red bell pepper, cut in 1/2-inch dice
- 1/2 small red onion, finely chopped
- 1/2 cup Castelvetrano or Kalamata olives, halved
- 4 oz (115 g) feta, crumbled
- 1 cup flat-leaf parsley, chopped (plus basil or dill if you have it)
- 1 tsp kosher salt, divided
- For the dressing: 1/4 cup extra-virgin olive oil
- 3 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove, grated
- 1 tsp dried oregano
- 1/2 tsp honey
- Black pepper and a pinch of chili flakes
How to make it
- Toss the diced cucumber with 1/2 tsp salt in a colander and leave it in the sink for 10 minutes. Spread the rinsed beans on a clean towel and pat them dry.
- In a large bowl, whisk the vinegar, lemon juice, mustard, garlic, oregano, honey, the remaining 1/2 tsp salt, pepper and chili flakes. Add the chopped onion and let it sit in the dressing while you prep, about 5 minutes. Whisk in the olive oil.
- Add the dried beans to the bowl and toss well. Leave them for 20 minutes so they drink up the dressing.
- Shake the cucumber dry (don't rinse it) and add it to the bowl with the pepper and olives. Toss, taste, and add more salt or vinegar until it tastes a little too sharp: it mellows in the fridge.
- Pack it into containers. Put the feta and herbs in a separate small container. It keeps 4 days in the fridge.
- To serve, spoon out a portion, scatter over feta and herbs and give it a last drizzle of olive oil.
Good to know
- Any two cans of beans work: chickpeas and white beans hold their shape best; black beans dye everything.
- Add crunch on the day: toasted pumpkin seeds or a handful of chopped almonds.
