Hatch Chile Mac & Cheese

A Trader Joe's favorite that comes and goes with Hatch chile season, so grab it when you see it.

Hatch chile mac with a tortilla-chip crust
A crunchy top is what boxed mac is missing. Crushed tortilla chips and sharp cheddar under the broiler give it a crisp crust in two minutes.

You need
- 1 Trader Joe's Hatch Chile Mac & Cheese
- 1 cup (30 g) tortilla chips, lightly crushed
- 1/3 cup (35 g) shredded sharp cheddar
- 1 tbsp melted butter
- 2 tbsp chopped cilantro and 1 lime wedge
- Hot sauce, to serve
How to make it
1. Heat the mac as the box says until hot and creamy. Spoon it into a small oven-safe skillet or baking dish.
2. Toss the crushed chips with the melted butter and the cheddar.
3. Heat the broiler with a rack 6 inches below it. Scatter the chip mix over the mac.
4. Broil 1 1/2 to 2 minutes, until the cheese melts and the chips brown at the edges. Don't walk away.
5. Top with cilantro and a squeeze of lime, and pass the hot sauce.
