20 min, plus 30 min resting · 2 long rolls, 4 people. Cold cuts sliced thin and layered loose, sharp provolone, shredded lettuce, onion and an oil-and-vinegar dressing on a roll with a crust that shatters. The 30-minute rest wrapped in paper is what makes it taste like a deli made it.
