   Bean & Rice Burrito

   The microwave makes it soft and steamy. A hot skillet makes it crisp outside, and a fried egg, salsa and avocado make it a proper meal.

   Amy's vegan burrito, a freezer staple since the 1980s, sold almost everywhere.

   Make it taste homemade

   Crisp skillet burrito with egg, salsa and avocado

   Microwave it to heat the inside, then crisp the tortilla in a buttered pan. It's how taquerias finish a burrito on the flat-top.

   You need

   • 1 Amy's Bean & Rice Burrito
   • 1 tsp butter or oil
   • 1 large egg (optional; leave it off to keep it vegan)
   • 1/2 avocado, sliced
   • 2 tbsp salsa verde or pico de gallo
   • Pinch of salt and a lime wedge

   How to make it

   1. Microwave the burrito as the box says, until hot in the middle.
   2. Melt the butter in a skillet over medium-high heat. Set the burrito seam side down and cook 1 to 2 minutes a side until crisp and golden.
   3. Move it to a plate. In the same pan, fry the egg until the white sets and the yolk is still soft.
   4. Cut the burrito in half on an angle and set the egg on top.
   5. Add the avocado, salsa, a pinch of salt and a squeeze of lime.
