    Mattar Paneer

    Amy's

Peas and soft cheese in a gentle tomato sauce, with basmati rice. A quick tadka (spices sizzled in butter) and quick-pickled onions turn it from mild into something with real life.

Amy's Indian line has been a natural-food freezer standby for years, sold at Whole Foods and most supermarkets.

    Make it taste homemade

Mattar paneer with a sizzling tadka and pickled onions

In Indian home cooking a tadka goes on at the end: whole spices popped in hot fat and poured over. It's the fastest way to add a layer of flavor to anything.

    You need

    • 1 Amy's Mattar Paneer
    • 1/4 small red onion, thinly sliced
    • 2 tbsp lime juice and a pinch of salt
    • 1 tbsp ghee or butter
    • 1/2 tsp cumin seeds
    • 1 small green chili, slit (optional)
    • Chopped cilantro

    How to make it

    1. Toss the red onion with the lime juice and salt and set aside while everything else cooks.
    2. Heat the mattar paneer as the box says.
    3. Heat the ghee in a small pan over medium-high heat. Add the cumin seeds and green chili and let them sizzle 30 seconds, until the seeds darken a shade.
    4. Pour the hot ghee and spices straight over the curry.
    5. Top with the pickled onions and cilantro.
