    Make it taste homemade

Gyoza with a crisp skirt and a three-ingredient dip

The skirt is built into the dumplings, so the box method is right. The upgrade is the dipping sauce gyoza shops put on every table, and a few cucumbers to cut the richness.

    You need

    • 12 Ajinomoto Japanese Style Gyoza, frozen
    • 2 tbsp soy sauce
    • 2 tbsp rice vinegar
    • 1/2 tsp toasted sesame oil
    • 1/2 tsp chili oil (rayu) or chili crisp
    • 1 Persian cucumber
    • Pinch of salt and 1/2 tsp toasted sesame seeds

    How to make it

    1. Set the frozen gyoza flat side down, touching, in a cold 10-inch nonstick pan. Cover and turn the heat to medium-high.
    2. Cook 12 minutes without lifting the lid much, until the skirt is golden and you hear it crackle. Uncover for the last minute to dry the bottoms.
    3. While they cook, stir the soy sauce, rice vinegar, sesame oil and chili oil in a small dish.
    4. Smash the cucumber with the flat of a knife, cut it into bite-size pieces, and toss with a pinch of salt and the sesame seeds.
    5. Put a plate upside down over the pan and flip the gyoza out in one piece, skirt side up. Serve with the dip and the cucumbers.
