    Brisket Phở

    Saiga Foods

Real broth and rice noodles in a bowl that's ready in about five minutes. What's missing is the plate of herbs and lime every pho shop puts on the table.

From a Vietnamese-American family business. Sold as a three-bowl mix pack (brisket and chicken) at Costco and through natural food co-ops.

Phở with the full herb plate

Half of pho is what you add at the table: fresh herbs, crunchy sprouts, lime, chili and a squeeze of hoisin. Five minutes of chopping makes the frozen bowl taste fresh.

    You need

    • 1 bowl Saiga Foods Brisket Phở
    • A big handful of bean sprouts
    • A few sprigs Thai basil (or regular basil) and cilantro
    • 1 lime, cut into wedges
    • 1 fresh jalapeño or Thai chili, thinly sliced
    • 1/4 small onion, sliced paper-thin and soaked in cold water 5 minutes
    • Hoisin and sriracha, to serve

    How to make it

    1. Heat the pho as the box says until the broth is steaming hot.
    2. While it heats, drain the onion and put the bean sprouts, herbs, lime and chili on a plate.
    3. Pour the hot pho into a big bowl and add the onion and a handful of sprouts so they soften a little in the broth.
    4. Tear in the basil and cilantro and squeeze in a lime wedge. Taste the broth first, then add chili.
    5. Put a little hoisin and sriracha in a small dish for dipping the meat rather than stirring it into the broth.

Chef's own upgrade, in our words. Save it and it opens in Chef Amazing with a timeline, the prep laid out and what you already have.
