Double Pepperoni Detroit-Style Pizza

A thick, square Detroit pie with a crunchy cheese crust around the edge. Bake it in a dark pan with a little extra cheese tucked into the corners and it gets the frico edge Detroit is famous for.

Called the best frozen pizza Costco carries by Tasting Table and Chowhound. Sold in two-packs.

Detroit pizza with a crisp cheese edge and hot honey
The famous edge is cheese that melts down the pan and fries. A handful of extra cheese around the sides does it at home. Hot honey is the finishing move pizzerias now put on pepperoni.

You need
- 1 Motor City Pizza Co. Double Pepperoni Pizza
- 1/2 cup (55 g) shredded low-moisture mozzarella or brick cheese
- 1 tbsp hot honey (or honey with a pinch of chili flakes)
- 1 tsp dried oregano
- 2 tbsp grated Parmigiano-Reggiano
How to make it
1. Heat the oven to 450°F. Set the frozen pizza in a dark 10-inch square or round metal pan, or a cast-iron skillet, just big enough to hold it.
2. Tuck the shredded mozzarella around the edge, between the crust and the pan, so it touches the hot metal.
3. Bake 16 to 20 minutes, until the cheese at the edge turns deep brown and lacy and the center bubbles.
4. Run a thin spatula around the edge to free the crispy cheese and slide the pizza onto a board. Rest 2 minutes.
5. Drizzle the hot honey over the pepperoni, then sprinkle the oregano and Parmigiano. Cut into squares.
