Gluten-free Florence

Eating gluten free here: Easy

Florence is easy for coeliacs: a fully gluten-free schiacciata on the city's famous sandwich street, gluten-free gelato in a real cone, and trattorie certified by Italy's coeliac association serving pappa al pomodoro and wild boar pappardelle.

What to ask
Sono celiaco. Non posso mangiare glutine, nemmeno in tracce. Questo piatto è preparato senza contaminazione?

I'm coeliac. I can't eat gluten, not even traces. Is this dish made with no cross-contamination?

Where to eat

100% gluten free

The whole kitchen is gluten free. Order anything.

Coeliac-careful kitchen

Not a gluten-free kitchen, but trained for coeliacs: accredited, a separate fryer or a separate menu with real protocols.

Before you go

Get the AIC app.

AIC, the Italian coeliac association, trains and certifies restaurants. Its app maps every certified place, about $3 for two weeks.

Tuscan soups are bread.

Pappa al pomodoro and ribollita are made with bread. Only order them where the kitchen makes them gluten free.

Gluten-free beer usually isn't.

Most "gluten free" beer in Florence is barley malt with the gluten broken down. Read the label, or drink wine.

Wheat starch is common in pizza.

Italian gluten-free pizza crusts often use gluten-free wheat starch. Fine for most coeliacs, not for a wheat allergy.

How Chef checks: every place here says it on its own site, or a coeliac writer who ate there does, and we link which. We checked on October 29, 2026. Kitchens change, staff change: if it's coeliac disease, say so every time. Photos marked "a photo like it" aren't of that place. No place paid to be here.

Chef Amazing remembers every place you ate, keeps the lists friends send you, and helps you cook it at home.
